To better look after Dork health it is suggested that campers co-operate like good comrades and cook together. (You are of course perfectly entitled to hang out in a corner and be weird and eat by yourself.)

Shared Menu

We assume that everyone is bringing their own food unless their name is on the list near the bottom of this page.


  • No meat is provided in the shared menu. Please bring your own for the BBQ.
  • Assume that there is no refrigeration available. Even if there is a fridge, it will not cope with food for 70 people
  • Bring your own cutlery

Menus

Would you like to offer to help cater for your comrades? Add your culinary offering to the Menu for the meal you can assist with:

Friday Night

  • West African Sweet Potato and cabbage stew (with corn bread, selection of cheeses, mixed green salad)

Saturday Breakfast

  • Porridge!

Saturday Lunch

  • Shepherd's Pie (with Tangy dill bean salad and spicy carrot and cumin salad)

Saturday Dinner

  • Cheesy Bean Enchiladas (with brown rice and mixed green salad) (its ok - we will mostly be outside anyways)

Saturday Pudding

  • apple and blackberry (if we can find any) crumble
  • custard

Sunday Lunch

  • BBQ
  • Vegan paella

Sunday Dinner

  • BBQ leftovers, probably... as people are trickling home

Cooking Equipment

If you are bringing cooking equipment add it to this list so that we know what we can cook with. The scout hut should also have some equipment in situ. Does anyone know what they have already? Fill in the list!

Ingredients List

We need to get things from somewhere. Lottie might know good local places, alternatively, there's always supermarkets! boo.

We have a budget of 500, assuming 10 quid per person and 50 participants. Of course there are likely to be fewer than that at every meal, taking into account flows of participants and one-nighters. However, cooking for 50 is a good bet as I'm sure there are plenty who can eat for two or more. I can anyway. --SaulAlbert 00:11, 19 August 2006 (BST)

Ok, I have added the quantities I will need to make the meals I suggested for 50 eaters. Feel free to substitute if something is too expensive or unavailable. There is nothing here for breakfasts, puddings, or BBQ -- (leftovers are definitely good - especially since we won't be able to nip out for a kebab/chips in the woods in the middle of the night!!!) Sweet potato soup = VEGAN, Shepherd's Pie = VEGAN, salads = ALL VEGAN, Enchiladas = VEGAN and VEGGIE versions will be provided (just so everyone knows!) --- April

Fresh veg and fruit:

  • yellow onions 20kg
  • red onions 1.5kg
  • sweet potatoes 12 kg
  • large white cabbage x2
  • fresh coriander 5-8 bunches, depending on size
  • fresh dill 2-3 bunches, depending on size
  • limes x10
  • lemons x8
  • white potatoes (or cheapest) 5kg
  • celery 2.5kg
  • green beans 5kg
  • red or yellow peppers 3kg
  • medium red cabbage x3
  • carrots 10kg
  • canned or fresh tomatoes 20kg
  • fresh tomatoes 5kg
  • garlic x5 heads
  • spring onions x4 bunches
  • lettuce (enough for 2 mixed salads for 2 meals - 6-8 heads)
  • cucumbers x5
  • other seasonal fresh salad greens (enough for 2 mixed salads for 2 meals)

Canned and frozen:

  • Quorn mince (or alternative) 3kg
  • sweet corn 3kg
  • peas 3kg
  • Dry ingredients:
  • cornmeal 1.5kg
  • flour 1kg
  • sugar 1kg
  • dry kidney beans 1kg
  • dry broad beans 1kg
  • dry black beans 1.5kg
  • flour tortillas 50-70 depending on price - ask about bulk discount!
  • short grain brown rice 4kg
  • pumpkin seeds 250g
  • raisins or currants 500g


Dairy and eggs:

  • milk 1.5L
  • soy milk 2.5L (for my breaky and custard)
  • eggs 1 dozen
  • butter/margerine 500g
  • cheeses (find out what is a good deal -definitely need 4kg cheddar)
  • plain yogurt 2-3 litres

Extras:

  • salt 250g
  • pepper 250g
  • chili powder/flakes or bottled hot sauce like Encona x2-3 bottles or 1 med bag
  • veggie worchestershire sauce x1 bottle
  • baking powder 125g
  • tomato puree x1 large can or tube
  • cumin x1 medium bag
  • basil x1 medium bag
  • red or white wine vinegar 500ml
  • sunflower oil 2 litres
  • aluminium foil 2 rolls
  • cling film 2 rolls
  • can of golden syrup for the apple and blackberry crumble
  • bird's custard powder (they do an egg free one)
  • Chick Pea Flour ( 500g ) - for vegan spanish omelettes

Vegan Paella Recipe

  • Olive oil (I will bring a bottle)
  • Pimenton (Spanish Paprika, I will bring my own)
  • Rice: 100 g per person
  • Vegs required: Onion, garlic, tomato, capsicum (red or green).
  • Vegs optional: Courgette, Aubergine, green beans, broadbeens peas, asparagus, leek, spinach, char, (a little) celery
  • Veg no-nos: Turnip, carrot, potato, sweet potato, sweet corn, cucumber.
  • Total Veg quantity: about 100g per person clean, 150g per person bulk.
  • Only possible if flat pans (frying pans) available in sufficient number.
  • A 32 cm pan serves 6-12 people depending on circumstances.

Cooking Equipment

  • Big Knives (do we have these, I can bring some)
  • NB: check this inventory with staff (it's in the questions lits): pots, pans, plates, cups, cutlery, bowls, big stove, fridge, chest freezer and a sink.

Possible Food Vendors

We may be able to get permission to have food delivered and stored on-site. If so, http://www.goodnessdirect.co.uk/ would be able to deliver almost everything we would need, even yummy things for the barbecue.

They are really cheap for bulk grocery items, and they are a workers cooperative too.

Infinity Foods are a local wholesale co-op but have a £150 minimum order.

Who will be joining in with the shared menu

  • Bastian, I like everything cooked. Looking forward to some veggie food and know one or two recipies myself (just in case). Still where I really shine is in my awesome washing-up skills. So if I am not useful for anything else, at least I can clean stuff.
  • Yoshi - I can cook Japanese Miso soup which has been served Area10, RampArt etc and got fenomenal reception (In the mountain shelter, I cooked and served up to 300 people in one go). I will bring all the ingredients Miso, Tofu, Fried Tofu etc. I have a big pan for this but if I got to take it there, I need a lift. (Tell me if the kitchin has big pan or not).
  • Javier Candeira - Sorry I am late. I can eat (almost) anything, don't mind doing a couple of shifts of dishwashing, and I would love to cook veggie paella if someone else brings the implements (a large enough flat pan). I can cook up to 3 paellas simultaneously with one helper, and a 32 cm diameter flat frying pan makes rice for 6-8 people, (10-12 if there is another course). I would also love to taste what a vegan (eggless) Spanish Omelette tasts like.
  • Robin H - I'd love to join in with shared food if it's vegan. Happy to help out in whatever way is most helpful: I quite enjoy washing up.

  • Bastian. Got 12 german sausages to chip into the BBQ pool, i am on the veggie list but need occasional meat from time to time + i like open fires.
  • James Larsson. Better treat me as being self-catering as I live almost exclusively on sandwiches. I will, however, be bringing some sausages for the BBQ.
